Daily Eats: Quarantine Style – Stay Home Diaries #12

Goooood-morning!

It’s feeling like a really good day over here friends.

I gave myself an attitude adjustment this week where I realized that my joy does NOT come from my circumstances, but that I get to choose my joy. I wrote a little bit about this adjustment here.

Let’s get into daily eats from this week so far!

Before we dive in… I want to preface this post by saying that this post is NOT for comparison – to compare your eats to mine. Rather, these posts have always been and will always be about inspiration.

Inspiration surrounding: new ideas around food; freedom with food; and trusting that YOU can listen to YOUR body and what feels good for you, as I listen to mine and do what feels right for me.

Monday

Two eggs on sourdough toast with butter

Breakfast Monday was two eggs on sourdough toast with butter. Simple! Delicious!

Pesto noodles, chicken, and arugula topped with parmesan cheese

For lunch I had leftover pesto noodles, chicken, and arugula topped with parmesan cheese.

Top Ramen- I added a tsp of butter (it gives it a smooth creamy flavor!) and an egg.

Mid-afternoon Marco asked me to make him Top Ramen. It sounded so good that I made myself a bowl too. In mine I added a tsp of butter (it gives it a smooth creamy flavor!) and an egg. Yum!

After my ramen, I relaxed and then around 5:00 I took Abby for a run in SLO. It was so nice to run without a time limit. It was so nice to be out and SEE PEOPLE.

When I got home we cleaned up the house, I showered, got into PJ’s, made tea, and started cooking dinner. We had spinach and cheese raviolis with ground beef on top. I added butternut squash to mine because, YUM!

Tuesday

Simple eggs and bacon. I added some guac to the side as well. When I was done with the eggs and bacon there were a couple bites of guac left that I scooped up with a few chips.

The next day for breakfast I was craving a simple eggs and bacon. So, that’s what I made. I added some guac to the side as well. When I was done with the eggs and bacon there were a couple bites of guac left that I scooped up with a few chips. Yum!

This meal held me over for a long time. I ate a very late lunch around 3:00 of leftover raviolis, butternut squash, and beef. Mmm, so good! I forgot to take a photo, but it was just like the night before.

Last bit of this Pistachio Talenti we had in the freezer.

After lunch I was craving some ice cold and creamy ice cream, so I ate the last bit of this Pistachio Talenti we had in the freezer. Yum!

Carne asada burritos

After lunch Marco and I drove around and looked at houses that had popped on the market yesterday (so many new ones went up, praise!) and then went to a friends house for a socially distanced driveway birthday celebration. SOOO good to see people.

We stayed until almost 9:00 pm and on the way home picked up carne asada burritos. Since it was so late and I wanted to sleep well, I cut mine in half, ate half, and saved the other half for breakfast today. Currently looking forward to the other half (love when I save myself leftovers!).

It’s been a really good week over here. I’ve been daily practicing my gratitude journal and my friends… it’s really helping my perspective during this quarantine.

Note to self: keep starting each day with a gratitude journal. I’ve also been a guest on quite a few podcasts with people and that’s been really fun!
