I promised I’d share the recipe with you. So, here you go :)!
This is one of the first foods in A LONG TIME that was shopped for completely at Whole Foods & not Trader Joe’s.
You see, the thing is… Marco loves ranch dressing. We buy him the Organic one from Whole Foods. Every once in a while, when we run out, I have to do two grocery trips. One to Whole Foods (I get Apline Valley bread here, too!) & another to TJ’s.
This weekend, I said forget it, let’s JUST go to Whole Foods. It wasn’t bad actually! Didn’t break the bank… and I even got to order our meat right from the butcher. Actually, this week I’ve been feeling that I have appreciated my food even more! It’s felt extra special being from WF Silly?
So, your ingredients for this breakfast burrito (mine from Whole Foods):
- whole wheat tortillas (small in size)
- Kerrygold butter (unsalted)
- eggs
- jalapeños
- cilantro
- green onion
- tomato’s
- sour cream (Strauss Farm)
- green tomatillo salsa
- cheddar/jack cheese blend
In a pan, melt a tsp. or two of Kerrygold butter. Add sliced jalapeños, green onions, and diced tomato. Scramble together until eggs are cooked through. Sprinkle a bit of cheese on the eggs. While that’s melting, warm your whole wheat tortilla on the stove. Set it on a plate, add your eggs, & top with cilantro, tomatillo salsa, and high-quality sour cream. Fold into a burrito & enjoy!
